What comes with a SIM Only deal?

I haven’t had to keep the phone I like from a contract ever. I’m wanting to keep my iPhone 12 Pro Max but don’t want to pay the high price I’m paying at the moment and my contract has ended. I keep seeing SIM only deals but do they come with texts and calls and data or do I need to look at Pay As You Go or has Pay As You Go become a thing of the past and SIM Only has replaced that?

Sim Only Deals are pretty much the same as Monthly Phone Plans but without the Cost of the phone, so you just pay for the Sim Airtime Contract, no Phone.

Calls, Texts and Data are all bundled in, just choose a Plan that suits you,

Biggest difference between PAYG and Sim Only is on Contract, PAYG there isn't one, Sim Only Plans can be 30 Days, 12 Months or 24 Months.

PAYG still lives on alongside contract SIM-Only & gives you 30-day packs of allowances of calls, texts & data.

All I'll add is try and choose a plan with an "extra" (formally smart plans) as you get a number of good add-on extras including extra roaming as one of the extras you can choose.
