I am just wondering if EE are planning on offering those of us on unlimited plans with Google pixel watches, an esim that doesn't make us pay for additional data?

I cannot say for sure but I bet the answer is no. 

They would also need to offer this on Apple devices. 

That means giving you a line for free.
