I'm having exactly the same problem - I moved over from PlusNet, requested an EE eSIM and submitted a PAC code in order to retain my old PlusNet number. I got up and running with the new eSIM on a temporary number and have been able to use mobile data and make/receive calls and texts right up until yesterday, when the port of my old PlusNet number was due to take place.
Since yesterday, the temporary EE number has now been replaced with the required (old) number when logging into EE's site/app, but I haven't received any emails or textsmessages to say the port has taken place. I currently have no mobile data and can't send texts or make and receive phone calls using either number. The only thing I can currently do is receive texts and only when they are sent to my temporary EE number !
The phone has been rebooted a number of times and the eSIM is definitely selected. It feels like the port has only been partially successful.
@martbox - did you manage to resolve this ? Can anyone else help ? I'll call CS tomorrow if this hasn't resolved itself by then but in the meantime, if anyone can help then that would be appreciated.

After a call to customer support, the fix in my case was to reset the mobile network settings on the phone (I'm not sure whether the CS agent also made any changes at their end)...
On a Google Pixel 7a running Android 14, you can do that via... Settings - System - Reset options - Reset mobile network settings

If this issue has only occurred since a port-in, it's only likely to be resolved by CS intervention.
