I recently transferred to EE from Tesco Mobile and am wanting to keep my original phone number. I’ve gone through the porting process and sent the PAC code which I’ve seen usually takes around 24-48 hours to process, however I received a text from 150 saying the porting process has been scheduled for 30/10/25 in 19 days. Is there any reason why it’s been scheduled so far away? I’m gonna have to keep using my old phone for now as don’t want to have to go round giving people a new phone number.

When you provide a PAC as part of an online order, it's put into a pending state for 30days until you are in a position to port-in - i.e. you have your new SIM and it activates onto EE's network,.
Your new EE SIM will have a temporary number assigned when you first receive it. If a PAC was supplied as part of the order, that will be submitted when you first activate the new SIM onto EE's network.
A port-in date will be set then, usually the following working day (NOT 24-48 hours as you may have been advised). This assumes activation during normal working hours - if during the evening, add an extra working day to these timescales.
There have been some posts reporting as you are, that the text message notification advises what appears to be the holding date rather than the actual date. If you want to establish the accurate porting date, then a call to CS on 150 is in order.
