I went into EE Sunday. He sent off my PAC and completed the mobile number transfer from o2 to my new sim contract with EE. He told me to put my sim in Monday night and Tuesday morning it would be completed. It’s not complete. My iPhone is showing both sims one o2 and one EE both different numbers. What do I do? I’ve had a text to say it will be completed by 5/8!

As @bristolian has mentioned above if your port in request was made on a weekend it will take 2 working days to process through. Here is more details on how to Transfer your number to EE and timescales.

Porting should complete with 1 working day of you activating your EE SIM on the EE network. Mon night to 6 AM today could well be too short. Wait until tonight.

in regards to the 2 sims that are showing under mobile network with the 2 numbers. Will that merge when the number transfer is complete?

I'd wager that if your SIM was activated after 5pm on Monday 7th, your PAC will be submitted Tuesday 8th for port-in on Wednesday 9th.
If you activated your SIM before 5pm on Monday, bring this timeline forward by one day.
