Recently, EE changed its inclusive extra deal to exclude Australia in the same roaming pass as the EU. I’m currently in Australia and will be for the rest of the year. I’m now unable to call EE to change it nor can I change it on the website because everything is greyed out. Please help!!

@bertinhuynh Roaming is for short stays abroad, 2 months in any 4 month period it’s not for long stays abroad. Even with the pass you could end up being charged for international calls/texts depending on your usage, You’ll be better off getting a local carrier sim.

I only need it for the data. If I'm paying for it, I'd like to use it

You can contact EE through a VOIP service such as Skype on +44 800 079 8586. This should be free.
They should be able to change your Inclusive Extra to Roaming Pass ROW for you if you explain the situation around it changing while you are away.

@bertinhuynh , there's a chat option in the EE app that you should be able to use on Wi-Fi if that's not greyed out too.
EE's app chat works pretty well - you can leave a message explaining your problem if there is no one around due to the time difference. When you resume the chat later an agent may have answered your question or be prepared to when you ping.

I have said "such as Skype" as it is still an active service and known by people of all levels of technical knowledge.
It will be shutting down from May and at that point there will be alternatives to mention instead.
I am unable to access the link you have sent, however the 0800 numbers EE provide are freephone, so there is no cost for calling them through a VOIP service such as Skype.

You can contact EE-CS on +44 7953 966150 from any working phone, once the Skype backdoor has been closed
Ultimately though, EE is a UK operator and roaming services are intended for UK residents taking short trips abroad - not those resident abroad long-term. EE's T&Cs do allow for this by means of the Stable Links Policy which broadly requires usage in the UK for 2months in every 4.
How long you'll get away with using inclusive roaming without any UK usage, would be upto EE to decide.

For anyone who visits Skype today, it's already dead. The link I gave is to the international numbers page on the Skype website. It says Skype to Phone services are no longer available.
If you install Skype today, it points you at Teams that offers a different set of services.
