I forgot to cancel my monthly subscription for my pay as you go sim. I was charged 27£ and I would like a refund as I’m currently not using the sim.

I'm afraid PAYG packs is not refundable.

Text STOP PACK to 150 to stop it reoccurring.

You can try calling EE on 150 to see but chances are slim.
