As anyone had any experience with a pay as you go, with a subscription pack and added a roaming aboard pass?

Nobody! Cuz they don't go together. The Roam Abroad Pass is only for contracts, not PAYG.

Canada, but my current provider says but a sim card in canada, but will not support me in any problems and I will not be able to use my own number while in Canada, for any urgent contacts that are made from the UK

Outside the EU, you cannot use your usual UK allowances there but will need to pay the charges or buy roaming add-ons as set out in https://ee.co.uk/help/mobile/roaming/roaming-costs/countries/canada > PAYG.

The use of a local SIM can sometimes be cheaper for data usage, but is by definition a local number and is foreign to UK callers.
To use your UK number whilst abroad, is roaming.
