My UK EE number is in the UK. The UK numbers I try to call are in the EU.

You need to diagnose whether the calls are dropping at your end or the recipient, and this can only be done by a process of elimination.
When either the called or calling party calls other numbers, does the same thing happen? The roaming numbers will have the option of connecting to alternative local networks, does the same thing happen then?

No, it doesn't happen on calls to UK mobiles in the UK.

When I call the UK numbers in the UK (while I'm in the UK), the calls don't drop.
The same happens when they use UK numbers to call UK numbers in the UK while they are in the EU. They don't drop either.
The roaming numbers usually connect to a local network that has the strongest signal.
Unless you change it manually.
