Hello, I upgraded to SIM only and my contract ends today. I haven’t received the new SIM in the post. Is this something that should have happened or is my original SIM still in use?

A change of payment-plan is just an account change, there's no need to replace a perfectly working SIM.
If your minimum-term has ended today, your new plan should already be active. Check on your myEE app, or if any of your allowances have changed - text BALANCE to 150 and see what is active.
