I have been an EE customer since 2002 and I am seriously considering leaving! I have spoken to four CSA's and apart from two helpful advisors the others have gaslighted me and making me out like I'm a liar. Each advisor I have spoken to have had a different take on why it isnt working. I have seen a number of posts where customers are having issues adding their EE Perk discounts.
Can someone who actually knows the process please tell me how I apply a EE perk discount online. I am aware that you cannot apply the code to 'already discounted' price plans.

It depends on the type of plan you're trying to add it to. You just add it as a Promo code in your basket or at checkout.
It can't be added to any plan with an Upgrade Anytime benefit or any plan which is a Promotional offer or discounted.
Do you have an example for the plans you're having difficulty with?

I am trying to upgrade to a sim only either 25GB or 100GB, neither have a discount on them.

The 100GB SIM at £20pm is a promotional/limited-time offer, not a part of EE's Core offers.
The 25GB SIM at £18pm is a discounted offer also, compared to the Core price which I believe is usually either £23pm or £25pm.
Neither of those plans would therefore be eligible for discount.
The price plans on the SIM Only Upgrade options eligible for discount currently are: Unlimited No Frills at £27, Unlimited Essentials at £32, Unlimited Essentials Plus at £36, Unlimited All Rounder at £42 or Unlimited Full Works at £48.
