Is it possible to check if your phone was in use on a certain date and time, so for example, on 10th April during the hours of 9am - 11am. Is there a way to show that the phone was actively being used?

There may be a third party app that does this, otherwise you would need to check your phone's call logs or (if you had it enabled at the time) itemised billing records.

Thanks. I have phone EE and they can only tell me that during a set window, ie. 13th- 15th May, there was 4G activity, but can't pinpoint an exact day or timeframe - odd that you used to get an itemised phone bill informing you of phone calls and duration, but I'm not able to access if the phone was in use using data and what sites I went on

Data & voice calls, have always been itemised differently. You can view the sites you've visited, in your phone's browser history.
