Hi, I switched from Vodafone to EE around 3 years ago as i knew it was and I must stress was the best Network and like you in the last 6 months the service for voice calls has deteriorated to the point that I will be leaving EE to.
I'm not sure what's happened to their Network and pretty sure they will never admit it either but something major has changed and I know from previous experiences that the only cure is to move Network Provider, I'm sure when enough people have left they will look into it somewhat more.
I have 2 mobiles one work and other private both now on EE and both call quality has deteriorated and this is country wide as i travel quite extensively.
I had even talked a good friend of mine to move from O2 to EE, big mistake and feel so let down by what used to be the best Network 😞

These sort of posts provoke mixed thoughts on my part, I've experienced network issues first-hand over many months that most users would put down to network degradation. Those turned out to be device-related, and were resolved by using a different phone.
Voice quality should be near perfect if you're using VoLTE, which supports WB-AMR ("HD" calling) & EVS ("HD+") codecs. If not, you have a fault somewhere which should be traced & diagnosed. I wouldn't be surprised if your calls were being handled by 2G, which only supports more limited codecs.
There is ongoing network activity related to 3G-sunset, if there were other widespread issues it would likely provoke a lot more complaints than appears evident.
