I think you also need to be running ios18, I am on the beta for that, full version is out next Tuesday

I’m also on the latest beta and confirmed on their website that my postcode has the 5G standalone enabled.
Could it be a carrier settings update that I’m not getting?

Could be SIM card as well, you need a reasonably recent sim version, esim or physical. You can download a new esim in the EE app, by going to the replace sim section

no, you have a setting when you go to mobile service, mobile data options then voice and data see this setting
