I will be travelling across 4 African countries and will need to add LOCAL eSIMs for each one. Can I buy these from EE in the UK, or do I need to source locally in Africa?

Your need to source the Sims or eSims directly from each Network Provider.

Good luck on your travels. Try the app from the play store "airalo" it uses esims. Used it when I traveled to South Africa.
Easy to setup and you use the local network of the place you visiting.
