I need to speak to a human being. EE seem to have made this impossible. I have followed the links and the texts and etc and there is no option to speak to customer services. This is ridiculous.

You can use the online chat to speak to someone-
Just Open the My EE app and log in to your account.
Alternatively, you can use an alternative phone to Contact our Technical Support team.
In the mean time, please test your SIM card in an alternative device, which will help rule out SIM card or device issue. You can also use our Service Status checker to see if there are any problems in your area.
