Hey!
Recently signed up to a SIM with the one discount, but cannot access the EE App or Website to manage my SIM (Understand I cannot with the 1.6GBPS online manage my broadband, but really need to manage my SIM etc.)
Any idea on how this can be done?

It's great to hear you have taken advantage of your EE One discount.
You should be able to add this on through your account, you can see the step-by-step here Linking Your EE Products.
