My wife and I have our contracts ending at the end of this month. We have always upgraded our phones and started new contracts. This time we are just wanting to transfer onto sim only as both handsets are fine. Having never done this previously I have a few queries:
* I assume I have to inform EE so that our current monthly tariffs are cancelled or do I automatically transfer onto a new deal?
* Do I need to stay with EE or can I move to a different provider?
* Do I just search on comparison sites for lowest sim only deal?
* DO I physically have to change sim if I dont stay with EE?
Any other advice hugely appreciated as this is new to me

You've fallen foul of a popular misunderstanding. EE's contracts are not fixed term ones that end on a particular date - on this basis you would be disconnected automatically. You have a rolling contract for your existing monthly payments that will continue at the same price unless you explicitly make a change. That change could be..
1: Choose to upgrade to a new phone, taking a new plan and fresh minimum term.
2: Change to a SIM-only plan, effective from the end of your minimum term - doing so either via calling CS or the "upgrade now" links on your myEE online account.
3; Give 30days cancellation notice, and either be disconnected at the end of that, or move to PAYG.
4: Port your number to another provider of your choice, auto-cancelling your contract in the process.

Thanks all - if I change provider I assume I will no longer have the transfer data feature to my son who is also currently with EE

Depends on the provider. They could well have similar facilities. I wouldn't know! You certainly wouldn't be able to transfer data to your son while he's still with EE.

Data sharing, in EE's case, is a benefit of multiple users being on the same pay-monthly billing account. If you were to port out, then you cannot be on same billing account as any other EE user.
As an aside, there would be no need for a new SIM with any new plan you take with EE, unless there's a problem with your current SIM or it's not working. Any price-plan change you make, is an account-level alteration that - if you request by phone - is normally active before you even terminate the call.
