Hi there, my contract ended in 2023, and since have been using a SIM only deal that cost £13 and has been on direct debit. I have just upgraded to another SIM only deal which costs £24 and is the unlimited all rounder . Will I get a new SIM card? Or do I just keep the same SIM card and the uncapped data speed begins straight away? Or does it take a few days..

Welcome to the community.
Its great to hear you have resigned up to a new Sim only contract. Usually the new plan would just start on your existing sim card unless at the point of renewal you request a replacement sim card.
If you have access to your EE account online or via the app you will be able to check if the new plan is now active.
