I’ve read somewhere if I pay my phone bill earlier than direct debit for the month it won’t take the direct debit because I’ve covered the bill already. Am I correct?

Almost! You need to manually pay your bill before your bill hits your a/c on your billing date. That implies you know or can estimate the amount before EE tells you what it is. That's cuz once the bill is posted the DD is put in motion towards your bank & will be taken from your bank about a week later. If any manual payment is made during this period it cannot stop the DD going out & so the manual payment will be held as credit on your a/c towards any future bill(s).
