Hi, my son is now working so I want him to have his mobile phone contract. I just don't want to be paying for his phone anymore lol. Can he take out his own contract but keep his ee number that's on my account?

What you're asking for is a change of legal ownership. If your son takes out a new contract it will come with a new number and his existing number cannot easily be ported across.
Take a read of point 3 under this help page which explains the process. Once your son is an account holder in his own right, then he can upgrade his phone and/or change plans as he sees fit.
