I keep being badgered about moving from BT to EE, but when I check the deals that are available to me, it offers me Fibre 67 All Rounder" for the same price I am currently paying BT. If I visit the website as a new customer, it offers me Fibre 67 Essentials for nearly £10/month less.
I don't need the extras that the more expensive packages offer as I mainly use a wired connection and am happy to continue using my own router. All I want is a package that will give me the same 80/20 VDSL connection that I have with BT, preferably for less money.
Is there a way I can choose from a wider selection of packages when switching to EE?

Thanks. I know I can always phone and speak to someone. I was hoping I could simply choose a package online so that I can do it hassle-free and know exactly what I'm getting. When I click the button on the BT website, it takes me to the EE site to choose a package.

You can only order online what it offers you online. Any deviation from that would need to be taken up with BT.
