currently im using my mobile via usb tethering to my pc for my home internet but im thinking of getting a fiber connection at home (70mbps) but i would need to reduce my pay monthly unlimited data plan (6 months into a 24month contract) as i would not need that any more if i had fiber at home, i dont mind starting a new contract if that is required but i cannot justify paying for fiber and unlimited data for my mobile.
can this be done or am i stuck in my contract for unlimited data on my mobile phone ?

You are effectively stuck with it. You cannot downsize a mobile plan mid-term. You could cancel it & take out a new smaller contract but you would have to pay off the rest of your min. term.
