My old contract ended and signed up to a new 120gb for £20 sim only contract but haven't received my new sim yet.
Seems really difficult to get any information online as what to do and as far as I am concerned, if this is the new level of customer service, you can shove your new contract right up your Harris.

I’ve brought that exact same sim as yourself on Monday and I’m still waiting for mine, I’m in the same boat can’t find any useful info at all

There's no such thing as a "5G SIM" or a "4G SIM", but an EE SIM.
EE have 5G-compatible plans, but that's not to say you need a particular SIM to change to one of those plans - an existing SIM is perfectly suitable.
Are you saying you've signed upto a new plan with a new number, and not received the order?
