I ordered an iPhone 12 Pro Max in Pacific Blue the other day and it said "in stock" when I ordered it. Come to check it today and it says "Out of Stock". Will this impact my delivery time / when should I expect it as it's been stuck on "Your orders being processed".

I ordered an iPhone Pro Max 128gb in Pacific blue yesterday when it was in stock and it still hasnt been processed and it now says "out of stock" how long would the wait time be for this?

Welcome to the community.
What did it say the expected timescale would be for delivery? It should of said 'we'll deliver to you once we receive stock from the manufacturer'.
When we get more stock in, we'll dispatch them in the order in which they were placed.

When I ordered it, it was currently in stock but no timescale was given. All my confirmation email says is that it is being "processed" still.
