so I’ve upgraded from sim only to pay monthly going from iPhone XS to iPhone 13 pro
It’s arrived today with new SIM card, can I not just use my old one and keep my number ?

Indeed you can. Simply insert your existing SIM into your new phone and that's what carries your number and account details.
EE often supply a replacement SIM with new phones incase, for whatever reason, you have a problem with your existing SIM.
If your existing SIM fits your new phone and works - there's your answer!!
