I have registered my interest in the ps5 pretty much every week and have never received one email or notification back back saying they are available , but then hearing that staff members in shops have been getting them or other customers

Ring them and ask them to check if you have Notifications enabled which you cannot check yourself. If you don't you won't receive any updates on PS5 stock. They can activate the notifications for you.
