For some reason my EE account email address is my iCloud, does this effect my data usage?
would having my gmail email address make a difference

Welcome to the community
The email address you use for online services will have no bearing on your data usage.
Your data usage is for connecting to the internet using your EE mobile.

It does not make any difference what email address you use and will not affect your data usage, it is the same with any email address.
Are you using the mail app for your emails? Would you use that if you have gmail or web?
You still have to use data, if not on wifi, to see the emails, but if you do not want emails downloaded to the app on a regular basis, you should be able to set it to manual download.
I presume if you had gmail, you would want notifications of emails you receive if you are using the web to read, then that will still use data. It depends how you want your emails, not sure whether ICloud can be only seen via the web, I know Windows Live can.

EE might send you the occasional email & you will be reading them using your data. You will use as much or as little data whichever email provider you use.
However if you are accessing more than 1 email addy in your Mail client or thro' a Web browser you will be effectively multiplying the little data you use. Email normally doesn't use much data unless they have large file attachments.
