Anyone have any idea how much data you would use monthly in a static caravan using iPads, tv with Netflix and Amazon and phones?

Welcome to the community!
Unfortunately, you have asked a classic "how long is a piece of string" type question, and there's no simple answer - it depends on the quality of the videos you're watching (SD/HD etc), how long you're watching things for, and a few other variables.

this is an educated shot in the dark i would suggest one person watch streaming video services and internet radio you use approx 89 Gb in a day over a 6 hour period with basic mah here 89 Gb per day time 7days = 623Gb a week
4 week in one month 2,492 Gb a month that a lot of money on pay as you go !

i would suggest just buying wifi for the caravan.we had to do the same.just message the wifi company to switch it off when yous aren’t there to stop it being too expensive

There is a smart benefit on sim only/phone plans called Video Data Pass that allows as much streaming as you like. You would need to sign up to a phone contract that includes one smart benefit or pay £8.99 a month (minimum 30 days).
Technically you are allowed to do what you like with a sim so you could put it in a router, however whenever doing anything like this keep an eye on your data usage in your account to see it is not using data up.
