I have just upgraded my phone to an iPhone XR. The colour I selected is out of stock so I want to see if I can change the colour to one that is in stock so I can have it sooner. I'm not sure how to get in touch with anyone about this?

Welcome to the EE Community,
If you contact customer services on freephone 0800 317 720 they will be able to cancel your initial order and place a new upgrade order for the other colour.
