I currently have a sim only plan pay monthly (not via direct debit), my son has a PAYG EE sim I’m wondering if I can upgrade his PAYG sim to a sim only pay monthly , keeping the same number , and add it to my account .

What you're asking to do, is effectively a combination of two processes.
The transfer from PAYG to pay-monthly can be done using the switch to pay-monthly service.
Ordinarily you may then need to conduct a "transfer of responsbility" as detailed under "transfer to a friend, colleague or family member" on this EE help page , but depending on the age of your son you may be able to get his SIM transferred directly into your pay-monthly account.
