Hi
I recently took out a 5gee home broadband contract. When I placed the order over the phone the representative said there is a 600gb fair usage policy on their normal unlimited mobile data packages but there is not one for the 5g (router) home broadband plan. I just wanted to confirm/double check this.

There are no T&C's that you can't use your phone as a personal WiFi device. That would be against Net Neutrality rules. Perhaps you are thinking of the T&C's for unlimited data phone plans where you can't use it for non-personal use.

If you regularly tether 12 or more devices, we will consider this non-personal use and have the right to move you to a more suitable plan.
We will consider usage above 600GB per month to be non-personal use and have the right to apply traffic management controls to deprioritise your mobile traffic during busy periods, or to move you to a business plan.

Maybe you can't now, but you could until very recently.
