I'm a little confused with the sim deals.
A 200 GB Smart Sim deal is £25 per month, 2 year contract.
A 200GB 5G Smart sim deal is £33 per month, 2 year contract.
The ordinary 200GB Smart Sim deal says the Smart sim includes access to the 5G network.
What is the difference, why is one more expensive than the other - if both offer access to 5G data?

EE often have promotional offers which may be time limited and so you may see similar offers with varying prices at any one time.

Thanks. Don't suppose you know if the "5G" service is the same on the Smart Plan vs the 5G plan, in the sense of speed and coverage?

It'll be the same in terms of speed and coverage.
