New Cellular watch.

Just had a new cellular Apple watch delivered. It’s the first time I’ve had one and it’s linked to my iPhone.
My question is, how do I set it up to receive calls when not connected to the phone? I’ve got a different number for it but when I call it it says number not available. Watch is linked to its own data plan.

Welcome to the community,

The number for the watch is for billing purposes and so calling it will not make any difference, as it is linked to your phone, it uses your phone’s number for calls. 

So long as it is linked to your phone, you will receive calls and can make them when phone is not with you, but phone needs to be on even if not with you.
