We have set our adult channel setting to show, removed parental controls but still cannot see adult channels etc in our tv guide.
We pay monthly via direct debit why is this??

Welcome to the community.
It will depend on how you have your EE TV box set up, as there are differences to the available channels between having it in aerial mode and internet mode.
The adult channels only appear to be available on aerial mode from the list of channels on our EE TV Channel Guide page.
If you have TV Box Pro on internet mode, you can reset the box and change to aerial mode, if you have a TV aerial installed, but it will delete any recordings you have and log you out of any of the apps. You can see how to do this on the About Aerial and Internet Modes on EE TV page.
If you are connected by aerial, and the channels aren't showing, it is worth rescanning the channels, and if that doesn't help, give our tech guides a call for further help.
If you are using the TV Box Edge or Apple TV 4K, you'll only be able to connect via internet mode.
