I'm interested in signing up for the new EE TV. I already have Apple TVs in my household, so I'd only really want access to the TV app itself - I wouldn't need apple TV 4k boxes from EE. Is this possible to order?

@Chris_BMy EE Broadband went live on Monday 22 July 2024, just two days ago. Am I therefore on New Broadband?

Yes, that's new EE broadband. You can't order EE TV online though - only over the phone.
