With the EE TV version of the Apple TV box, are you able to download the full available applications from the apple app store? So other streaming apps such as Amazon, Disney+ etc? (Realising that these subscriptions would be managed independently from EE TV packages) or is the box restricted / limited to the EE TV managed content providers

It's a fully functional Apple TV with no restrictions - you can install any other apps you need.
The only difference is the remote control, and it comes pre-configured with EE TV.

I’ve got a call back today where I’ll hopefully be able to place an order to move over to EE Broadband with TV.
Does the Apple TV and App supplied through EE allow for viewing the same amount of channels as the TV Box Pro?
I’m struggling to find any details on the differences in functionality as there is a lack of reviews etc with it being a new service. From what I can tell though the differences between them is that with the TV Box Pro you can record and pause live TV but with the Apple TV you can’t?
Which is fine for me as long as it delivers the same channels as the TV Box Pro does?

The EE Apple TV experience offers all the same channels that are available from the TV Box Pro in Internet Mode. These are the Freeview channels:

You then have all the subscription channels on top (depending on the package you choose).
