I have a similar problem to JayCee1949.
Having been a BT mobile customer for long time, I was told that, when my contracts ended ( two sim only ), I would be transferred to EE, and, offered a deal from EE, which I agreed to.
I received two EE SIM cards and went through the process of changing over. All seemed to go quite well, and we are up and running with EE mobile.
My problem is, that when I, or my wife ring, or text anyone, the TEMPORARY NUMBER shows up. NOT our original number. The result being, that people do not recognise this number, and do not answer. This has resulted in a lot of frustration, and some harsh words.
Do you have an answer to this?

It appears that iPhone was not saving the number when I changed it. On the advice of Apple Support, I reset the network settings on the phones, and changed the numbers again. " SAVE " seems to be working now, and the phones are holding the correct numbers.
We seem to have got there in the end.

If someone calls you on your original (BT) number, does the call come through to your EE SIMs?
Can you text NUMBER to 150 from each SIM? Does it show the original number or temporary number in the reply?

Bristolian. It shows the original number.
I did not " port in " my self . It was done, last week, by the EE technical rep, when I phoned to ask about the procedure with the SIM cards.

Thanks for confirming that @brimar1, it's definitely a good sign is the correct number appears to be assigned at the network level.
What model of phone are you using at the moment?
If it's an iPhone, can you please go into your Settings and select Apps > Phone > My Number?
If this still shows the temporary number, you can delete this and enter the correct one that you want to keep

I, and my wife both use iPhone 12 mini's.
I have done as you suggested, and replaced the temporary number with my own. However, when I go back into " My Number " it has replaced my number with the temporary number again. This is the same on both phones.
