has anyone else had calls saying ee is updating sim only to 5g and need to do it now , the email plus calls seemed dodgy?

If you received this via email, it will have been sent from an email address. Look at the "from" line
Reputable organisations would usually address you by name if you're an existing customer, so a lack of that is certainly a rer flag.
