I had originally gave my pac code to the person on the phone to keep my number, but since doing that I have changed my mind about keeping my number and cancelled my number with my previous supplier, since doing the order, so when the sim arrives will it be ok as the switch over won't be able to happen as the number no longer works.

Just to confirm your EE sim card will come with a new number and that will be the number you will keep now you have cancelled your previous number.
