My husband and I have recently ported our numbers and have this problem with the 'temporary' number on the new sims showing. I have a Google Pixel and my husband has an Oppo.
Is there any way to change the number to show the actual active (ported) number. The local shop couldn't help, but what happens if we change actual phones? Is the ported number attached to the sim even though the phone doesn't show this in the settings (the numbers have been ported and show correctly when we make calls - it's just nice having the number shoing in the phone's settings).

The phone will save the first number it reads on a SIM as the number in the phone settings, even though the number on the SIM itself has actually changed. So yes the ported numbers will be active on the SIMs. And if you changed to a new phone it should show the correct number as it will be that one it reads off the SIM first.
As @XRaySpeX said the number showing differently in settings should have no impact on your services and the ported number on your SIM will be the one in use for calls and texts.
Though if you do use Google RCS chats, the number there may need updated to show correctly when sending chats to other users. You can check just by opening the Messages app, click the profile icon in the top right, click Message settings then RCS chats.
If you have the service turned on it will show the current number in use, if its the incorrect one just turn chats on and off and it should re-verify your number.
In terms of ways to update the number in the settings menu, Android phones don't have the option to manually update it currently. If you have a spare iPhone, popping the SIM into there and manually changing the number and then saving it before popping the SIM back in the phone will usually update it.
Additionally getting a replacement SIM card would force it to update as the phone would then read the new SIM and update. However as mentioned its not something that has any impact on your service so it is fine to leave it as is and nothing to worry about.

Yes. What no. shows in About Phone doesn't matter as long as calls in & out get to the right place with the right no.
