I ordered a new SIM card 2 days ago. I woke up this morning to find I had no service and was unable to make any calls. The new SIM card has not yet arrived and I am unable to make any calls to enquire about this.

Ah, I see. That's certainly a scenario where physical-SIM makes things easier.
You can only have one SIM active per mobile number, without being initimately familiar with the eSIM activation process I would imagine a replacement SIM has potentially been issued and thus your existing one deactivated. I think you probably have 2 alternate courses of action now.
1: Find another working phone which enables you to contact EE-CS to make enquiries.
2: Visit an EE retail store with valid photo-ID and they can issue you a replacement physical SIM there & then. If you still want to migrate to e-SIM afterwards, then you can do so.

What was the reason for the new SIM? Was this a new connection? Lost/stolen replacement? Or something else?

I had an e sim in my previous phone however I now have a new phone and was wanting a replacement sim to use in my new phone.

My concern is with activating the new SIM as I would not be able to receive the code via text.

Welcome to the Community.
I understand your concerns, as Bristolian mentioned if you pop into your local EE shop with proof of ID they can issue you with a physical Sim card straight away.
