Unless your replacement phone has an active SIM in it (be it physical or electronic) it won't connect to EE's network - there's no getting around that. This is one scenario where a physical SIM allows for simple swapping between phones.
I'm not familiar enough with the eSIM activation/swapping process to comment further.
