I’m in Thailand, got a new phone in uk, iphone15, made my old sim an eSIM, got an eSIM package before I landed for Thailand, all good. Went to 7/11 as advised to get a Thai sim, they put it in my phone, and seem to have deleted my old number. Added old sim card back in, still says primary as before, number is there but I can’t convert it back to an eSIM, the convert button won’t work. Have I lost my number forever? Any clue on how to get it back and then add the new sim as my Thai sim and keep my old number too? Fuming if I’ve lost my number, it’s on all my business cards!

If you've deleted an eSIM whilst abroad, this can be particularly problematic - there's no easy way to reinstate that.
The normal process to replace a lost SIM is to have a physical SIM posted to your billing address or issued face-to-face in an EE retail store, and then subsequently convert that to an electronic SIM if you so desire. That can't happen whilst you are abroad.
You should prepare to be offline until your return to the UK now, at which point you can replace the SIM.
