New SIM card

I have SIM only contract. I changed my contract a week ago and have been sent a new SIM card with instructions to place the new SIM in my phone. Do I have to do this? I don't want to change my mobile phone number. The new SIM has a different phone number,

Continue using your old SIM. It will have the upgraded plan on it.

Did you upgrade or take out a new contract? 

Do you have two numbers showing in your My EE account?

I upgraded. And I do have 2 numbers now on my EE account.

I would suggest giving us a call on 150 and the team will get this looked into for you, as this does sound like a new contract has been added instead of upgrading your existing contract. They will check this for you and help you further.
