Deleting eSIM on old phone

Hello! Just upgraded to iphone 16Pro from iphone 14 pro and had a few problems with the eSIM which hopefully are now sorted. I want to wipe my old phone to gift to my Mum. When I erase the contents - do I need to select 'keep eSIM and erase data' or 'delete eSIM and erase data'? My new eSIM was sent to my old phone and I had to transfer this across so I was worried if I click delete, would this delete it from my new phone too? Apologies if this is a stupid question but just had so many problems this week!

@littlepants : If you have your eSIM on your new phone it can't possibly be on your old phone too.
