@pinkfire In order to have a contract for the watch your iPhone needs to be on contract also that could be a full device contract or a sim only contract. You setup a Watch contract up via the watch app on your iPhone. As you already have the watch the contract for the watch will be a 30 day rolling contract at £7 per month and you’ll get 10Gb of data just for the watch.
