Sorry if this is a stupid question, So I have a Full works sim only which gives me inclusive roaming in EU and also selected other countries. As part of my plan I also get free watch plan for my samsung watch ultra. I think from what i understand is EE don't offer roaming data on my watch plan but if I receive calls on my watch whilst my phone is not with me will I be charged standard rates for those calls? Or is it best just to turn off the watch eSim before I go?

Any calls you receive will be to your phone only and will only show on your Watch due to the Bluetooth connection between the two when they are together. If you leave your phone behind, you will not be able to receive calls until you get back to your phone.
The Watch will be unable to connect to any mobile networks whatsoever outside of the UK - whether that be for calls, texts or data.
If you have the ability to turn off the eSIM you can do so if that would make you feel more comfortable. Ultimately it will not work either way.

@Timmylad1975a , I have never turned the ESim on the watch off when abroad, as have the phone with me and have never had charges on the watch, as I have always had plan for data and calls and it has worked fine with the watch and phone being with me, no need to turn the cellular off on the watch, you will not get charged, s you have inclusive roaming.
