Apologies for the most basic question, but it seems impossible to get a clear answer to this from all the articles.
Have purchased the £25p/m roaming pass for a visit to the USA and have activated roaming on my phone.
Do I need to change any other settings in my phone? E.g. Turn off wi-fi calling? Turn off Mobile data? Turn on/off data roaming?
Or is it really as simple as keeping all settings as I would in the UK , and just turning on my phone when I arrive and everything will be fine?

Roaming is not a phone setting, it's often confused with "data roaming" which just enables the use of mobile data whilst roaming.
Roaming itself - the ability to use foreign networks - is an account-level setting. On pay-monthly, it needs enabling by texting ROAMING to 150 and following the instructions.
Aside from the "data roaming" & "allow use of mobile data?" menu options, there are no phone settings you should need to change.
