I have come to Morocco for a holiday and I use my EE sim for work calls. I have paid extra to have calls working abroad and have bought an e Sim for mobile data usage with the e Sim with Orange.
I have an iPhone 15 Pro Max. When I go into Network Selection, I deselect the automatic and it doesn’t show EE, but is showing Orange, Maroc Telecom and inwi. So when I am making calls with my UK EE number, it is using the eSIM orange network provider instead of EE. How do I fix this, please note I have restarted my phone and it doesn’t show EE against my UK number.

Dual-SIM phones have an option to select which SIM is "primary" for different functions - outgoing calls, texts & mobile data. Both are usually active for incoming calls & texts.
Sounds like you've got the local SIM active for outgoing calls.

No I don’t have the eSim active for voice calls, only for roaming as that’s the package I’ve bought.
The Orange ESim looks like as if it’s overriding the EE UK sim. How do I fix this issue with the iPhone 15 pro max?

Not sure what you mean. Roaming means using your phone abroad. EE's add-ons can reduce the cost of voice-roaming, text-roaming & data-roaming.
There's some advice on using dual-SIM on Apple's support page - https://support.apple.com/en-gb/109317

That's as it should be. When you are abroad roaming your phone connects to a local network, not EE itself, & that network works for you on behalf of EE by a roaming arrangement between the 2. Looks like your EE SIM has connected to the local Orange network, which coincidently is the same as your eSIM provider.
You won't have the Orange eSIM active for roaming as it's in its own country; it's just active for data.

Makes sense but problem is, I paid EE for 60 mins for around £15 to be used abroad but every time I make a call it goes to a local voicemail.

Hi @Solo0121
Welcome to the community.
I hope you are enjoying your time away so far.
Have you been able to try manually changing to one of the other available networks to see if you are able to make a call?

Do you mean the voicemail of the person whom you are calling?
